Black Bean Lentil Burger I'm obsessed with lately!

The black bean lentil feta burgers I’m obsessed with lately! I’ve been trying to eat more lentils lately but I feel like they can be so boringggg. So I’ve been trying out new ways to make them more exciting and here is one of my favorite ways I’m hooked on! The recipe is so easy and freezes well for meal prep. These have so many nutrients are super healthy and protein packed. These can be made gluten-free, vegan or vegetarian as well. & if you haven’t tried my lemon harissa sauce than you’re seriously missing out! Ingredients: 1 can black beans, strained 1 cup dry lentils (red, green or black) 1 tbsp oil 1 red bell pepper 1 medium white onion 3 garlic cloves 2 eggs 1/2 cup feta 1 cup breadcrumbs 2 tbsp ketchup (I used MY tomato jam) 1 tbsp Worcestershire sauce Spices: 1 tsp each cumin, smoked paprika & chili flakes Pinch of Salt & pepper Directions: Pulse onion, pepper & garlic in food processor than sauté in the oil till soft about 8-10 mins. Cook lentils as per package*. Lightly mix all the ingredients in a big bowl. Take half the mixture and pulse till smooth. Add the pulsed mixture back into the bowl. Mix well and let sit in the fridge for at least 30 mins. Set oven to 165 C. Use a 1/3 cup measuring cup to scoop out and form the burgers one by one and put on a baking tray with parchment and a spray of oil. Let them bake 10 mins on each side and enjoy! You can eat them just with the sauce or on buns/lettuce wraps. Lemon Harissa Sauce 1/2 cup mayo Juice of 1 lemon 1 tbsp harissa (more or less depending on spice preference) Mix & use with lentil burgers or literally anything else * Usually 2:1 water to lentil, add salt and cook about 20-30 mins
